We use a Cabernet Franc barrel from Barrister Winery. The green (pre-roasted) coffee sits in the barrel for 8 weeks including the coffee being "misted". The coffee is regularly cupped to monitor absorption and flavor. The roasting process evaporates all the alcohol leaving a defined Red Wine profile to the coffee.
